Tart and cooling. Hibiscus gives it the colour and the sharp edge, peppermint keeps it bright, and rose and calendula round off the finish. Better over ice than hot — brew it double strength, let it cool, and it is worth looking at in a glass jug.

How to brew One heaped teaspoon per cup. Water just off the boil. Steep 5–7 minutes and strain. For iced, use two teaspoons and pour over a full glass once cool.
