A proper chai with no tea leaf in it. Ginger, cinnamon, cardamom, clove and black pepper over red rooibos, which stands in for the black tea and does it well — deep red, a little tannic, sweet at the back. It takes milk, which most herbal infusions do not. The one to make if you gave up chai lattes and have missed them.

How to brew One heaped teaspoon per cup. Water just off the boil. Steep 5–7 minutes and strain. Simmer it in milk for ten minutes instead if you want it as a latte.
