A chai with no tea leaf in it, built on honeybush instead. Cinnamon, cardamom, fennel, clove and ginger over apple — sweeter and rounder than our Rooibos Chai, and the more approachable of the two. Takes milk well. Good hot, and surprisingly good iced.

How to brew One heaped teaspoon per cup. Water just off the boil. Steep 5–7 minutes and strain. Simmer it in milk for ten minutes instead if you want it as a latte.
